New York Strip Steaks w/ Thyme and Garlic Butter
4 New York Strip steaks, 1 1/2 inches thick

Salt and Pepper

Thyme and Garlic Butter
1/2 cup salted butter at room temp
1 Tbsp minced fresh thyme or 1 1/2 Tsp dried thyme
4 cloves garlic, minced
1-2 dashes Worcestershire sauce
1-2 dashes Tabasco sauce

Garlic Thyme Butter
Usa a fork to blend the butter with the thyme and garlic in a small bowl. Add Worcestershire sauce and Tabasco sauce to taste. Stir to blend. Set aside or form into a log in waxed paper and refrigerate until ready to use.


Spinkle both sides of steaks generously with salt and pepper.

Prepare charcoal or gas grill for direct grilling over medium-high heat.

Grill steaks directly over heat, turning 2-3 times until well browned on the outside, 8-12 minutes total....


Chilled Pepper and Eggplant Terrine by York Harbor Inn
Ingredients: Fresh Red Peppers Fresh Eggplant Olive Oil Roasted Garlic (diced and minced) Crushed Pistachios or Pine Nuts Salt & Pepper Pesto Cut peppers in half. Brush with olive oil. Lay with outsides up on sheet pan. Brown to slightly burnt under broiler. Peel off skins. Set aside. Heat olive oil in sautT pan. Peel eggplant and slice very thin into strip 2"x6" long. Fry eggplant strips in olive oil till brown. Set aside. Lay peppers in bottom of hotel pan covering bottom of pan. Add salt & pepper, minced roasted garlic, crushed pine nuts or pistachios, and olive oil. Lay eggplant next, covering the bottom layer of peppers. Add salt & pepper, minced roasted garlic, crushed nuts, olive oil... Continue layering in this fashion till pan is near full. Take second hotel pan and set on top (bottom first) of filled pan - place heavy cans or some weight on top of top pan to compress layers. Refrigerate....
